INGREDIENTS
- 1 cup gluten-free flour
- 1⁄4 cup of oatmeal
- 1 scoop of Protein XPN Whey-X (plain)
- 1⁄4 cup of Swerve All Natural Sweetner
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1⁄4 cup egg white
- 1 tablespoon apple cider vinegar
- 2 teaspoons of Walden Farm Syrup
- 2 tablespoons of Nutiva Melted Coconut Oil Butter flavor
- 1⁄4 cup almond milk
Apple Crumble (Topping)
- 1⁄2 apple cut into small pieces
- 1⁄4 cup of oatmeal
- 1 tablespoon of Nutiva Melted Coconut Oil Butter flavor
- 1 tablespoon of Walden Farm Syrup
STEPS
- Preheat oven to 350°F. Butter a baking sheet with coconut oil;
- In a bowl, mix flour, protein, oatmeal, Swerve, baking powder and cinnamon;
- In another bowl, mix almond milk, egg white, apple cider vinegar, Walden Farm syrup, coconut oil.
- Add this mixture to the dry ingredients and stir until a paste forms;
- Add the mixture to the muffin cups and save some room for the crumble;
- In a bowl, mix the ingredients for the crumble, then add the mixture to the top of each muffin tin;
- Bake for 17-20 minutes;
- Let cool, then enjoy.
