Healthy Easter Chocolate Protein Muffins
These Easter chocolate protein muffins are not only delicious and healthy, but they're also a great way to enjoy the holiday while increasing your protein intake.
INGREDIENTS:
- 1 1/2 cups oat flour (or all-purpose flour)
- 1/2 cup chocolate protein powder ( we used Believe Flavored Isolate -Chocolate Brownies)
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 ripe bananas, mashed
- 1/4 cup unsweetened applesauce
- 1/4 cup plain Greek yogurt
- 1/4 cup almond milk (or any milk of your choice)
- 2 tablespoons of maple syrup or Swerve All Natural Sweetner (optional, depending on desired sweetness)
- 1 teaspoon vanilla extract
- Dark chocolate chips (optional, for extra chocolate)
Easter Decoration (optional):
- Chocolate Easter eggs
- Multicolored sprinkles
- Shredded coconut dyed green to simulate grass
Instructions:

Preheat your oven to 180°C (350°F) and lightly grease a muffin tin or use paper liners.

In a large bowl, mix together oat flour, chocolate protein powder, cocoa powder, baking powder, baking soda, and salt.

In another bowl, mix mashed bananas, applesauce, Greek yogurt, almond milk, maple syrup (or Swerve), and vanilla extract until well combined.

Pour the wet mixture into the dry mixture and stir until all ingredients are well combined. If using chocolate chips, add them and gently mix.

Divide the batter into the muffin cups, filling each about 3/4 full.

Bake the muffins in the preheated oven for about 15 to 20 minutes, or until a toothpick inserted into the center comes out clean.

Let the muffins cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.

Once cooled, decorate the muffins with chocolate Easter eggs, colorful sprinkles, and shredded coconut dyed green to simulate grass.
