No Sugar added Apple Muffins
You'll be making this recipe every fall, guaranteed! These no sugar added apple muffins contain over 15g of protein per muffin!
INGREDIENTS
Dry Ingredients:
- 1 cup of unbleached flour
- 1 cup of almond flour
- 3 scoops of Believe Transparent Isolate protein
- 1 tsp. of baking soda
- 1/2 teaspoon of salt
- 1 beaten egg
- 1 cup of milk
- 1 tablespoon of lemon juice
- 1/2 cup of Nutiva Melted Coconut Oil Butter flavor
- 1 tsp. of vanilla
- 1 cup of Swerve Sugar Free Brown Sugar
- 2 cups of grated apples
Topping
- 1/4 cup of Swerve Sugar Free Brown Sugar
- 1/4 cup of unbleached flour
- 1 tsp of ground or grated cinnamon
- 2 tbsp. of Nutiva Melted Coconut Oil Butter flavor
STEPS
- Preheat oven to 375°F and place rack in middle position;
- In a first bowl, mix the ingredients for the filling with a fork and set aside;
- In a second bowl, mix dry ingredients and set aside;
- In a third bowl, combine liquid ingredients and grated apples;
- Add contents of 2nd bowl to 3rd bowl and mix well;
- Pour mixture into 8 large muffin cups previously coated with non-stick cooking spray;
- Add topping (contents of 1st bowl) to each muffin;
- Bake for about 30 minutes or until a toothpick inserted in the center of a muffin comes out clean and the top is comes out clean and the top is golden brown.
- Let sit 15 minutes before eat it up.
